Friday Night

...and I am pretty done in from the week. So what to make? I never really plan for my Friday night meal to be particularly simple, but when I look back on past menus it does seem that my recipes get easier and easier as the week goes on. Tonight was a family favorite...taco night. Not much cooking here! Tonight's tacos involved the following ingredients:
-1 can of pinto beans, warmed up on the stove (not the can, just the beans. In a pot.)
-Trader Joe's pico de gallo salsa (a little mild for D and my tastes, but Z loves it)
-1 avocado, cut up and tossed with the juice of half a lemon and a little salt
-leftover salmon from last night
-Whole Foods organic blue corn crispy taco shells
-Trader Joe's quattro formaggio shredded cheese. For the sake of simplicity this is the only shredded cheese we buy. It is very flavorful and works for everything from tacos and quesadillas to pasta.
-Cabbage slaw

As you can see from the list, the only thing that really needs preparation is the cabbage slaw. And it is EASY. And DELICIOUS. And it involves all of 4 ingredients:
1. cabbage (tonight I used a mix of purple and green for a total of 4 to 6 cups sliced super thin)
2. cilantro (about one cup minced)
3. juice of 2 lemons
4. salt
All you do is mix the above ingredients together and voila! Instant flavor. It is really really good, and it hasn't gotten boring yet.

I ended up having one taco, a huge salad like mash up of the ingredients and some of Z's leftovers. We were all hungry so almost everything disappeared.

What about the rest of the day, you ask? Nothing very thrilling...a shake and some mint tea for breakfast, a big Whole Foods salad with spinach, tofu, edamame, salsa and guacamole for lunch, a cup of decaf chai with skim milk and a chocolate chip cookie for snack. For dessert I had a big craving for hot cocoa so I made myself a small mug. I would have more but I have learned from previous experience that cocoa and I don't get along well when it comes time to sleep. I was HUNGRY all afternoon so I did also raid the stash of miniature peanut butter sandwich crackers a few times and also had a spoonful of peanut butter after dinner. Not really Cambiati-friendly, but I couldn't put the brakes on my hunger this afternoon!
