Not much variation...
Really, writing all this down makes me realize how boring our meals are! A couple of days ago I had the following: for breakfast (big surprise) a banana and spinach shake, for lunch a huge salad with spinach, leftover veggies and the rest of my coconut curry tempeh and some Trader Joe's yellow curry dressing. It was good! The tempeh comes from Whole Foods and is organic and not genetically modified (a big problem with soy these days). For dinner we went to the Hot Shop in Albany...a little hole in the wall place that has some INSANELY good lamb curry burritos. They call it the "Tropical" burrito and it is just delicious. After dinner we also ventured over to Gelateria Naia and I had a nice cone of my old standby white mint chip with a little Rechiutti Chocolate Malt on top. It was good, and the crazy thing is that I can eat a huge meal like that and not feel a) stuffed at the end of it or b) inclined to eat another meal like it again the next day. I just really enjoy the meal and then am happy to go back to the original routine.
Yesterday was about as boring of a day as they come. In short it went like this: shake for breakfast, salad with garbanzo bean burger for lunch, cookie after school, and then a big salad with a edamame burger and some leftover whole wheat gnocchi for dinner. I had a race to get up for in the morning and I didn't want to spend my whole evening cooking. The guys also had some turkey kielbasa, which is a favorite around here, but the veggie burger sounded like a better pre-race meal!
Today was a race day, but I have been finding that things have gone so well that I wasn't inclined to change the routine too much. I did have about 1/4 of a plain bagel in the morning, but I didn't want to surprise my stomach too much by eating before I ran after all these months of running on an empty stomach. I did take 2 Hammer Gels during the race...one at mile 5 and one at mile 9 and 1/2. They were espresso flavored with caffeine and they were just what I needed. After the race and my cooldown I immediately had my banana spinach shake. I also got my friend E. to taste it and while she grimaced as she tried it she pronounced it surprising and tasty afterwards! On the way home I drank some peppermint tea and then had another big veggie burger-topped salad for lunch...but since I had just run a half marathon I also threw in about 1/2 of a nut-butter and jam sandwich and a bunch of yogurt covered raisins. An hour or so later I had a clementine (we hardly eat any fruit around here, but it sounded perfect) and half of one of Zachary's Z bars. I followed those with half of my cookie to top off my stomach. I don't feel famished like I used to after a race, but I am looking forward to dinner...which, due to my laziness tonight will be a vegetarian fajita bowl from Chipotle: rice, black beans, peppers and onions, tomato salsa, corn salsa, lettuce and guacamole. A little take out is my post-race prize to myself!
See, I said it was a boring few days! I can promise more variety and a few new recipes this week...I have just had my focus elsewhere and been too in love with the tasty veggie burgers to really want to eat anything else!
