Well darn it, here it is 9 p.m. and I forgot to get off of the computer. But since I am still awake I figured I would update the last post and say that the dinner tonight was insanely good. Even Z gobbled it down with great gusto. I made this recipe: http://www.101cookbooks.com/archives/raw-tuscan-kale-salad-recipe.html and added in one spring onion (sort of like a gigantic green onion) that I sliced up super thin. I served the salad with over easy eggs on top and a cheese quesadilla on a whole wheat tortilla on the side for sharing. It was superbly flavorful, and so satisfying to know that the kale and onion came from a local farm and the lemon juice in the dressing came from right outside my back door! Now if we could just get a chicken coop built then I could have uber-local eggs too...
